Sausage in sausageThis is a snack invented in Taiwan. A segment of Taiwanese pork sausage is wrapped in a sticky rice sausage. It's a Taiwanese hot dog, and you can find it in night markets all over the island.

MUST DO: MAKING TOFU IN LUOSHAN

The process begins by grinding soybeans to obtain their juice. The juice is then combined with water and transferred to a large wok where it’s brought to a boil. Once the tofu is brought to a boil, it’s then simmered and strained. The remaining milk is mixed with water from a mud volcano. The final step is to shape the tofu and remove any remaining water.

This dish was inspired by the chef’s visit to Qijing, where he tasted different kinds of fresh seafood, and the experience of making Hakka “Lei Cha.”
