As chef and owner of Fat Rice, Abraham Conlon has quickly been recognized as one of the Chicago’s top chefs. He has received awards and recognition from James Beard, Jean Banchet, Bon Appetite Magazine, Food & Wine magazine and many others. At Fat Rice Chef Conlon specializes in the food of Macau, combining the cuisine of his Portuguese roots along with his penchant for Asian flavors and techniques. He is a graduate of the Culinary Institute of America in Hyde Park, New York and was the youngest chef to be awarded a Four Diamond rating by the AAA in 2005. Prior to the opening of Fat Rice in 2012, Chef Conlon ran the very successful underground dining group, X-marx, which gained a following of over 5,000 people, many of whom continue to patronize his restaurant.
